Fish and Chips Wrap
ingredients
8 wraps made with SELECTA® Tortilla Mix
For the Batter:
1¼ cups MASECA® corn masa flour
1 tablespoon sugar
½ cup milk
½ cup beer
½ cup water
3 eggs
1 tablespoon mustard
1 tablespoon Worcestershire sauce
½ teaspoon baking powder
1 teaspoon salt
1 teaspoon pepper
For the Fish Marinade:
3 white fish fillets
¼ cup lemon juice
2 tablespoons mustard
2 tablespoons Worcestershire sauce
1 teaspoon salt
2 cups SELECTA all-purpose wheat flour
1 package French fries
2 cups mayonnaise
For the Batter:

For the Fish Marinade:

2 cups SELECTA all-purpose wheat flour
1 package French fries
2 cups mayonnaise
Procedure
For the batter:
Combine all dry ingredients in a bowl. Add eggs one by one, then beer and milk, beating constantly. Add mustard and Worcestershire sauce, and continue beating until there are no lumps. Set aside and allow batter to rest for 30 minutes.
For the marinade:
Cut fish fillets in strips. In a bowl, combine lemon juice, mustard, Worcestershire sauce, and salt; add fish. Allow fish to marinate at least 20 minutes.
Dredge marinated fish strips in SELECTA all-purpose flour and then in prepared batter. Carefully drop into hot oil and fry until golden; remove from oil and drain on absorbent paper towels.
To assemble wrap, spread mayonnaise on a wrap and top with several strips of fish. Roll and cut in half on the diagonal. Serve with French fries.
Yield: 6 to 8 servings
Tip: This delicious wrap can be made with chicken, shrimp, or beef.
